The farm is at the centre of life at the Villa. The vines, olive groves, fruit orchards and vegetable garden occupy the land that surrounds us. Everything we grow, we use when we cook for guests and in our cooking classes.
Using traditional practices, our integrated farming respects the land, prioritises people’s health and the health of the planet. And our farm is an all year round affair!
In spring, whilst the almond and cherry trees blossom we harvest artichokes and wild baby greens. In summer it is an explosion of taste and colours with tomatoes, green beans, courgettes, aubergines, figs, peaches and much more. In autumn it’s time to make our own natural wine and cold pressed extra virgin olive oil. Even in winter we have fresh vegetables, including broccoli, fennel, and cavolo nero. As well as all the fruit and vegetables we keep rabbits, free range chickens and ducks who give us fresh eggs every day. And all the organic waste we produce…actually does not go to waste at all but goes into our compost.
